I have a beef stew recipe similar to yours except I use chuck roast as it has a fair amount of fat that can be trimed and use that tied in cheese cloth instead of lard. Its really good cooked in a cast iron dutch oven on a spit. (a tripod with a chain to hold the oven over an open fire).
