There's a ton of super cool breeds, defo have a look ! Some are considered unethical though because they cause health issues or hinder their normal behavior too much

Our feral pigeons we see in the city are descendants of domesticated birds. Some of those ancestors were what we call fancy pigeons, breeds if you will, created by humans, that either escaped or were let out.

Also ! They're one of the oldest domesticated animals, spanning thousands of years ! We have records of domestication in Ancient Mesopotamia, Ancient Egypt, 500 BC Turkey, Roman Empire, etc. We kept them for meat, fertilizer, religious sacrifice, sending messages, and as pets !
They never really needed nest building skills actually, in the wild they're cliff dwelling birds ! So their nests are in crevices in which they only needed something to keep the egg from rolling off. A few sticks do the trick !

Also that's a calling/nesting sound, either trying to seduce a nearby pigeon or calling to its mate. They also do that sound when they're comfortable sometimes but that seems to be the less likely situation
It's true he puffs up a bit more than you'd usually expect, could be old pouter genes surfacing !
