When you’re grilling kafta you have to be careful. The parsley and onion add a lot of water to the mix so they will take a little longer than you expect. Because the lamb is so lean it’s also easy to overcook them (they’ll still be delicious, just firm).
When you’re ready to serve, add olive oil and lemon juice, mix it together and enjoy.
Dice the tomatoes and place them on top of the parsley. At this point, if you’re not ready to serve place it in the fridge until you are ready.
Then it’s the worst part, chopping the parsley. It gets everywhere and is almost worse than dog hair like that. I use my blender because I don’t currently have a food processor.
While you’re soaking the bulgur finely chop some scallions. Mix the whites in with the bulgur and spices and leave the greens on top.
Next step: make the tabouleh. Start by soaking and rinsing the bulgur. Then add salt, pepper, and Lebanese spices. #lebanese #food

Mix it all up then form the kebabs and store them in the fridge until it’s time to cook.
Then I add 1lb of 80/20 ground beef (for fat and to cut the lambiness) minced parsley and onion, salt, pepper, and Lebanese spices.
Lamb grinds so nicely.
