I have been using 4.1 Blender for half of 2024, and somehow i managed to skip two entire updates.
and now 4.3 has new UV options, a EEVEE raytracing, and a whole bunch of new stuff i still havent seen????

LOL that's where the eye index comes in, you can do a swap between textures depending on the index. Though main issue is proper aspect ratio and resolution, plus all the other stuff with stereo rendering ;-;
So jealous you get to work on this, wish I had time to learn it

Ironically portal effect would be easy, get a viewport result then map it to the albedo, then change the vertices uvs to screenspace??? been a while
you could also make it vr supportive since you can use the eye index to do translations. it would be only hypothetical, bunch of stuff makes it no good
