Struggled alot with the snake method and cold last night....took longer as I never got up temp in the end filled both ends up with charcoal to get up to a decent heat (we briefly way to hot at one point then🤣) and left it as needed some sleep.

Great balls of fire!! Another little flare up, while moving the Brisket around ... spritz didnt help 🤣 very slowly coming along!!
Was hoping I'd be able to wrap it and chuck it in the oven by now so I can sleep

3 hours into the cook and doing our first check and spritz... a little bit of a flare up where I am having to move the giant hunk of meat around to avoid direct heat

Ended up giving it quite a long rest while we went ut to get some last minute things and picked up a gift delivered to a store. Did have a pint and breakfast at spoons though.
Came back to pull the butt after a nice 6 hojr rest... what might be my most delicious pulled pork yet!

After way longer than I expected cleaning up, getting the pork butt moved over to a new pan with drippings... I poured on some vinegar sauce too and the meat package is cooking away at the stall!

2:30 in the AM and and its looking good! Ready to wrap it up...
Left my portable light on outside and my dad has moved my working head torch so its dark af. Which caused some spillage when trying to collect the drippings as foil pan was apparently made weak af

Short ribs are coming along fine... infact so fine I might not bother with a wrap and just get some sleep while they get done!

5am! Pork Butt is now pulled and mixed with jus and Angus and Oinks glazed and confused...
Now the worry starts on whether I should lefy some plainer Pork out. Mixed the jus or not mixed the bark in!
We shall see this afternoon!

Nine and a half hours later! It's ready for a nice long rest ... after a little bit already fallen off! Saved all the jus to mix with sauce, as we're going to reheat this tomorrow afternoon!
