yeahhhh yah this method is taking more time but mostly just waiting time to let the dough to do whatever！ Is really high hydration dough，a bit sticky. Make hands wet when stretch and fold is easier

1. 300g flour + 200g water -fridge for an hour
2. add （10g honey+2g yeast+20g water+3g salt）mixed well
3.stretch and fold sit for 30min （repeat 3 times）
4.throw to fridge overnight
5. mornin，20min room tem，cut into size and shape it
6.rise for 1h
7.230degree 20min （put ice on side to make steam）
