For someone who doesn't watch a ton of TV anymore I still think about TV an awful lot.

Five years pass between seasons 1 and 2. If you can't think of at least a couple years worth of stories to bridge that gap, you shouldn't be in television. You should be producing movies, or video games.

The thing about death and ending character arcs in The Last of Us is that source material is just that: source. It's OK to deviate, especially when a character has a lot more story left in them. You do a disservice to story when moving from A to B takes precedence over character.
