Unseeded kits work fine, and if consensus is one of the seeded kits are better than the rest, that one gets taken first and I feel like I'm at an inherent disadvantage against those players.

When I start a deck, I try to write down a few themes/build directions for the deck, then I find cards that do those things, get the search term for that effect from Scryfall Tagger, and scroll the list of every card that does thing!
But if I'm stumped I'll just netdeck and figure it out backwards
If you want to build a deck in an hour, edhrec/netdecking will get you there
But for more organic deckbuilding, I feel like speed comes with time and experience! Learning scryfall searching is huge, and of course knowing the landbase + staples for your color will be like half your deck right there
