Deli cheese is typically considered to be higher quality, sometimes it has more salt than the blocks you find in the dairy aisle. I personally haven't noticed a difference between the two when I use them, but I'm also not choosey as long as it melts

If you don't mind unsolicited advice, I legit buy blocks of cheese and shred them myself and then freeze em in freezer bags, that way I can have shredded cheese on hand for whatever. Little more laborious short term but they put this weird coating on pre shredded cheese that I just do not care for.
