In other countries, nitrates, celery, or salt are the anti oxidants. "Rotting" and oxidation aren't the same. All you apply to this is "chemical bad" 🙃. "Organic" cured products get meat cured with celery juice= Higher nitrates than just sodium nitrate. Use of C02 enables less salt additives.

There's no conclusive evidence to support that. The cancer study most people refer to was funded by an activist lobbyist group.
