Something in garter stitch or seed stitch or reverse stockinette will distribute all those hits of color more evenly so you don't get clumps of 1 color ("pooling"). A hat or cowl would be smashing and you can get away with wearing all those brights that in a sweater'd make you look like a clown.

Not really easy to learn to make the stitches doing any kind of pattern more complicated than a simple square. A search on "how to knit" on DuckDuckGo gives quite a few videos but also some tutorials that show the mechanics step by step.
Stranded or log cabin fingerless gloves (hint: they don't have to match) or look for slip stitch stash hat on Ravelry. Really warm because it makes a double layer.
