I would recommend building a Tree Walking interpreter first, that gives more space for tinkering with language grammer and behaviors, it gives you a base framework to work as a reference for the JIT compiler.

Look I am not radically against AI or anything, we are talking in the context of indie games. In my personal belief, I expect indie games to have the personal touch of the creator, the flaws, the quirks, the bugs.
Then I can draw multiple variations of each part and dynamically join them to generate the characters at runtime. Making the variants more diverse can generate a more unique feel among characters.
I am not sure about your specific use case, so I may be wrong.
Let's assume I need a large number of unique humanoid characters, what I can do is dynamically generate them.
For example, I can break down the characters into distinct parts, such as hair, hands, legs, and shirt.
If someone can't draw or create art or music that's fine, there are public domain artworks/assets available out there; such as Kenney's assets, opengameart or other asset stores, If you have a good concept people will overlook these.
I don't understand whether people get the same sense of fulfillment using AI art instead of making everything themselves.
What I usually do is, make rudimentary artwork for prototypes then after I finish most of the game mechanics and programming, I start working on art again.
