I mixed it up a bit this weekend. I did the usual #sourdough bread and later I tried out King Arthur's Giant Hostess Cupcake Cake. Both are tasty in their own ways.
The crumb.
This is my go-to score at the moment. I've seen is called a diagonal Saucisson scoring.
I like the look, but also it tends to guide the expansion of the dough towards the ends giving a more consistent slice size.

On the boule, I decided to season with the seasonings from the ranch recipe I have. It's a ranch #sourdough. The batard is my go to recipe.
The bake smelled great! I can't wait to cut it.

Two 900g loaves
Mixing it with some yeast and warm water, getting a good kneading with the stand mixer. I went from dough mixing to oven in about 90 minutes. Baked at 500 degrees on a pizza steel in a Lloyd pan, I was pleased with the results.
I had a craving for some Detroit style pizza. But didn't have time to do it right, so I used some refrigerated #sourdough starter to give the crust a little boost of flavor.
So one of the problems with #sourdough is "wasted" flour from discard. If you are in the mood for brownies, this is a good recipe if you like a fudge-like brownie.

So back in 1993, I went to a book store in Lexington because Anne Rice was doing a book signing promoting Lasher. I bought her book and decided to pick up Howard Stern's Private Parts.

I always cold ferment which does help getting blisters. You should have heard it crackling and popping after I pulled out of the oven
I was trying out a French cut with my latest bake.
It looks like it forced the oven spring towards the ends of the loaf. It seems like I may end up with more consistent bread slices compared to a single long score of the loaf. #sourdough
I like to think of it as putting them to bed. 💤💤
Turning the last 30 minutes of my #sourdough bake into 12 seconds. It's difficult to film the oven spring through cast iron. 😀 I'm never as happy with the bread if I don't use a Dutch oven to bake.
I did do my weekly bread, but I'd been craving #sourdough cinnamon rolls ever since I got my healthy starter. #kingarthur
I used a King Arthur Flour recipe.
The recipe says cut into 12 rolls but I do wish I would have cut into 9 rolls. I like bigger rolls.😋

I like to do a cold proof overnight. It's easier to score and I think it develops a bit more flavor.
For covering for the cold proof I usually use disposable shower caps. You can reuse them for a while.
