Maybe this one? quatLookAt? That convert quaternion to euler angles.

I can't think offhand what to do if Blender, your fbx file and your engine don't agree on what's "up" though.

Your linear algebra library would probably include some function to calculate the rotation (as a quaternion, or Euler angles) based on the lookat vector and the "up" vector.

Yeah, that's typically called a "look at" rotation. In addition to the vector from the camera to the interest point, you need an additional piece of data, that is which direction is "up". Presumably that would either be (0, 0, 1) or (0, 1, 0) depending what the fbx convention is (or your engine's).

I'm guessing those are the Euler angles. I don't know what language your engine is in, or how you're representing rotations, but presumably there is some way to express that with Euler angles?
