My hotel balcony overlooks the bar.
The door is open to rid my instrument cases and the room of the smell of marajuana. Mind you, NONE of this pot smell is of my making—my studio is in Oregon and all my gear reeks from a nearby grow.
The number of versions of Rudolph The Red Nosed Reindeer I’ve heard today can no longer be accurately calculated. Mind you, this is coming from a poolside bar in LA.
I like the finest whole wheat grind I can find for bread baking. I’ve heard that the ground husk acts like tiny knives puncturing the open bubbles in a proofing crumb, so the finer the better, imo
I blend in a local organic wheat mix that’s grown near me in Oregon from Camas Mill. I suggest finding something similar in your area. I’m not as fond as most of the standard grocery store whole wheat offerings in terms of flavor and grind.

An open crumb is usually a result of a strong starter, a good proof that’s not TOO long (so it still has somewhere to go in the oven), & higher hydration. I find King Arthur Bread Flour to be foolproof for a stretchy open crumb, and then I mix in local, organic, flavorful flours. 1/2
