The original HEB roast didn’t include them, but the produce section has fresh black eyed peas so I just threw them in the roasting pan. I try to put them in the bottom of the pan, and they cook in the pan juices.

I couldn’t find a big-enough roast in the pre-portioned section, so I asked the HEB butcher if he could cut me one. Turns out, I could get a Prime roast cut for me at $1 less per pound than the pre-portioned Choice roast that was already out in the meat section!
