I just season/dry rub the pork belly, no curing salt, and leave it in the fridge for 5 - 7 days, turning/drying, then freeze. I doubt she's nitrite sensitive because nitrite cured meats are fine. There's a LOT of sensitivities (as well as celiac) that make Christmas baking - fun! lol
Dehydrate the skins (make sure they aren't spotted) and when they're done, break them up and then blend them into a powder! (Let them sit in the blender/whatever for a bit so you don't breathe in the powder!)
I've recently found out through my Mom's cousin (because she can't have celery), that 'natural flavouring' almost ALWAYS has either celery powder or carrot powder. Pretty certain I have it in my mix for 'curing' bacon...though it's more wet age then freeze.
Save that until I tell y'all about celery powder! 😂
It's SO easy to make yourself if you can tomatoes! It's literally just dehydrated skins! Concentrated tomato flavour!
