It sounds frivolous, but I know that I am going to my grave without ever tasting another Clark Bar, and I don't want future generations to have to experience that. Recognizing that food is culture means recognizing that in an industrialized society, those products are our foodways.

All of these are beloved - and yes, important - parts of the culture. But there are no mechanisms to preserve their continued manufacture, and not even any real consideration of their cultural importance.

Just to rant for a moment, there's a real threat from globalization to foods that are both local and industrially produced.

What would Detroit be without Faygo? Pennsylvania without Tastykakes? North Carolina without Cheerwine? Would the moon still rise over Chattanooga without Moon Pies?
