If you’re going to use extension cables, use a decent manufacturer.

Daisy chaining of extensions is probably more of a trip hazard than an overload hazard for IT equipment (depending how you locate them).

Individually switched extensions with a built in surge protector would be my go-to.

It’s a relatively straightforward task to change a single wall socket to a double (depending on wall type).

Adding additional sockets is a bit more involved unless you want to surface mount them with IT-type trunking.
