Put *very* simply - you can't stylize what you don't know. You need to get to know your subject matter inside and out for effective simplification/ stylization 😁 Only then can the shapes become muscle memory = frees up brain space to play w/ the shapes as you draw.

- learning the muscle origins and attachments (where they are stuck to the bone on both ends), which gives you a sense of how the muscles flow across the body. It does become muscle memory after a while 🙂

Thanks for asking! It's definitely something you get over time. I'd say the two biggest influences have been 1. just spending a lot of time around animals in general and observing them, and 2. doing anatomy studies (see Terryl Whitlatch and Jon Kuo) where I really focus on -
