🔥 tips:
go for authentic 1st then play around

I've done all veg w/ fennel, zucchini, green beans, artichoke hearts, all prawns, mussels, also chicken

Paprika's 👍 but saffron *makes the dish*

A lil fresh orange juice+zest brightens it

Any pan will work. Bonus pts for cast iron

My simplified version:
Saute proteins and/or veg until just under done> Set aside

Toast fideos in oil til golden brown
Add grated/finely chopped *fresh* tomato and dry vermouth. Let pan get close to dry.
Add meat/veg back to pan with broth. Simmer til fideos are tender BUT still al dente
