This scene only works on film and ratchets the tension very uncomfortably.
Yeah the "ate his liver" line is actually more heady in the book, but the film version SOUNDS great.
I'll follow up with a specific point for Silence of the Lambs. That scene where the SWAT team is carefully setting up and getting into place and ringing the doorbell. Cut to the doorbell notification for Buffalo Bill and him opening the door to Clarice while the SWAT happens elsewhere.

I love ISFSB so much. I even annoy the moderators on a regular basis by adding books and mess up formatting in at least one field per book 😅
Also Sarah's collections are always amazing. I look forward to putting each one on my shelf. Sooner or Later Everything Falls into the Sea was one of my two standout fave collections for 2019. (The other was Matt Cardin's To Rouse Leviathan)
