I actually know about this, cause I lost the fight against an avocado with a big knife. Your fingers have 2 arteries each. A sharp knife does not need much pressure to go very deep. It bleeds a lot. Healing takes weeks, mobility is terrible.

I hate those scenes. You use your hand so much.
