Great idea - if you have tools and basic carpentry skills, and the means to drive around collecting pallets. Don't get me wrong, I have something similar, but I was lucky enough to have a friend who could collect materials and assemble it.

You can definitely freeze it - I've just done a big batch. You only have to worry if you have thawed chicken and refrozen it without cooking it in between. The long simmering to make stock will kill off any microbes. Just cool it quickly and freeze it within a day or two.
