No problem! Vinegar is fascinating. Once you start digging into the science of balsamic production, things get very complicated.

So really, the key driver of the final acidity in the vinegar is the original alcohol level, not the wine’s starting acidity.

I don't know the exaact maths but I think the grape acidity would probably make up about 10% of the final acidity. Bear in mind that "7 degrees of Acidity" would mean 70g/Litre. Sherry acidity is roughly 6g/Litre. But thats all very rough maths!

Not a joke! The majority of the acid in vinegar is acetic acid, produced when acetic acid bacteria oxidise ethanol.
