You bullied us into packaging it, so word of warning, buy it, and buy it in huge amounts, or we will never package it again. Yes. We’re making threats. Thirteen years in the brewing business means we can market how we want to.
There hasn’t been a single beer more requested in the last two years. And you know what, you broke us. We’re doing it. Pistachios, our cream ale with vanilla and, wait for it, pistachios, releases this Friday at noon. Pre-order starts Wednesday evening.
Are you going to can Pistachios? When are you going to can Pistachios? Why haven’t you canned Pistachios yet? Honestly for the last 2 years, it feels like we have a bunch of pistachio lobby equivalent of Chewlies Gum Reps up in the taproom trying to drum up demand for this beer.

Last summer we introduced Beer for Superdawg, a Chicago Style Pilsner brewed in collaboration with @offcolorbrewing.bsky.social With how much people have enjoyed that year round offering, we thought it would be fun to roll out a new seasonal beer, and with a new super-cute label update!
Every Allagash Saison Day we like to roll out some cool new one-offs and rarities of our own for the crowd to enjoy. And what better way to celebrate than with a new take on our flagship saison. Tapping when we open at 11am on Saturday. Cherry Apex Predator. Draft only. One 1/2 barrel. #saisonday
This one pairs perfecty with sunbathing on Chicago’s world famous concrete beaches. Available today at Mousetrap. Distro to follow.
So you get all the fruit notes of the cocktail without the alcoholic bite. A heavy cranberry juice addition lends a lovely peach hue and a complex acidity. While the peach creates the illusion of sweetness to round out the acidity and farmhouse ale base beer.
We essentially substitute farmhouse ale, aromatically hopped with Cascade, for orange juice and then re-fermented the beer with cranberry concentrate plus peach and lemon purees, while saving the vodka for ourselves.
Screw it. We’re releasing our spring lager this week, so we figured we might as well release our summer ale as well. Available today at Mousetrap, Beer for Beaches is a saison inspired by the Sex On the Beach cocktail.
The resulting beer features a Vienna malt profile balanced mostly by a round ethanol warmth and dark stone fruit esters in a traditional German lager perfect for days with cold mornings and warm afternoons. Available Friday in the taproom. Distro to follow.
For this offering, Vienna malt comes to the forefront after selecting a specific lager yeast and fermentation temperature schedule. We filled our mash tun to the brim with lightly toasted malt and balanced it with just enough German hops before a long lager fermentation.
Originally we just got mad and decided to brew a Maibock one April when the, like, hundred thousand American craft breweries there are were not making a Maibock when we wanted to drink one.

The secret to this spring time offering is not messing much with this classic lager featuring lighter color but elevated alcohol.
A nod to the breathtaking array of potential and opportunity hidden in our surrounds that’s only a slight shift of perception away.

Soft, rotund acidity presents itself alongside elements of spring harvest meadow honey and perfumed jasmine. Mid palate notes of dry hay and peaches lay chrysalis to an iridescent display of orchard fruits, lime zest, honeysuckle, and lambic-adjacent pineapple funk.
A bit more about the beer though. Niagara is a white grape cross between Concord and White Cassady. They are most commonly used to make white grape juice and not wine as extended skin contact time contributes a rustic element.
Then in August of 2024, those same professors brought us more grapes that we again put into an oak barrel filled with a tart saison (pictured above). After a nice long slumber that beer is now ready to go and we’re really excited for you to try it.

Back in the spring of 2024, we released Hydriad, a tart saison aged in an oak barrel with whole cluster Niagara grapes grown here in a Chicago backyard by two local professors gracious enough to share their season’s bounty.
