I personally don't have a huge opinion or reason as to why, and some people headcannon characters as certain races for whatever reasons they see! I think the largest thing for pinkie pie is her hair, she's seen multiple times with afro like hairstyles.

The problem mainly lies within the 4chan/Twitter side of the fandom, they'll go to lengths to harass/shit on anyone that dares to make a human version of a pony not straight and white. It's disgusting and revolting and god forbid it makes someone not want to draw or post again. (Thank you!!)
