Pluralization and gender is normally taken in account in the system. Counting system also from what I remember. In my opinion all you have to do is choose between the 'simple' version with spreadsheets exported to the translations folder in tsv or po files which is a more evolved approach.
Do you mean that the Godot's localization pipeline (with spreadsheets in .tsv) isn't sufficient ? Hearthstone had the exact same thing at the time in their own ripped apart version of unity engine, so I think this method can handle a ton of texts.
