From 1943, The Modern Family Cookbook by Meta Givens JAM ÉCLAIR CAKES ½ cup cake four ½ teaspoon baking powder 1 tablespoon cold water ¼ teaspoon vanilla ⅛ teaspoon salt ¼ to ⅓ cup jam 2 eggs, separated Icing or unsweetened ¾ cup XXXX sugar whipped cream Sift flour, measure, add baking powder and salt, and resift 3 times. Beat yolks with sugar until thick and yellow. Add water and vanilla and stir well. Add to stiffly beaten egg whites and fold in well. Fold in the dry ingredients in 3 portions. Bake in buttered pan (7 inches square and 1¼ deep) in a moderately slow oven (325° F.) for 35 to 40 minutes. Cut in pieces about the size of an éclair, make a slit in the side and insert jam. Top with Butter Cream Frosting or whipped cream. 6 servings.

From 1943, The Modern Family Cookbook by Meta Given SLICED CUCUMBER SALAD Wash, peel and slice 1 large cucumber. Sprinkle with salt and pepper; cover with vinegar diluted with half as much water, and chill at least an hour. Serve as is, or drain and serve on lettuce with mayonnaise (843) or French Dressing. Peeled, thinly sliced onions or sliced tomatoes also combine well with cucumber in seasoned vinegar. 5 servings. CUCUMBER COCKTAIL 1¼ cups finely diced, peeled Few grains pepper cucumber 2 teaspoons lemon juice 1¼ teaspoons sugar ½ cup sour cream teaspoon salt Lettuce Sprinkle cucumber with sugar, salt, pepper, and lemon juice. Fold cucumber mixture into sour cream and chill thoroughly before serving. Serve in lettuce cups, or in sherbet glasses lined with heart leaves of lettuce. 5 servings.

From 1975, Joy of Cooking SAUCE COCKAIGNE About 8 Cups A sauce for all seasons—its ingredients are always available. Great with custards, glazed bananas, cottage pudding and waffles, by itself or combined with a little liqueur or whipped cream. Cook gently in a wide-bottomed covered pan until the fruit is pulpy and disintegrates easily when stirred with a wire whisk: 2 cups dried apricots 1¼ cups water Add: 1½ cups sugar Stir until dissolved. Add: 5 cups canned crushed pineapple Bring the mixture to a boil. Pour into jars and cover. Keep under refrigeration.

From 1943, The Modern Family Cookbook by Meta Givens PINEAPPLE MUFFINS 2 cups all-purpose flour 5 teaspoons tartrate or calcium-phosphate baking powder, or 3¾ teaspoons S.A.S.-phosphate baking powder ½ teaspoon salt ¼ cup sugar 1 egg, beaten 1 cup milk 1 14-oz. tin pineapple pieces 1 tablespoon sugar 1 teaspoon cinnamon ¼ cup butter Sift flour, measure, and resift twice with baking powder and salt. Cream butter thoroughly, and blend in the ¼ cup sugar. Add egg and beat until smooth and fluffy. Add sifted dry ingredients and milk alter-nately, beginning and ending with flour and beating well after each ad-dition. Drop batter into well-buttered muffin pans, filling them about half full. Drain pineapple pieces and place one or two on top of each muffin, and sprinkle with a portion of the 1 tablespoon sugar and the cinnamon, mixed together. Bake in a moderately hot oven (400° F.) about 20 minutes, or until golden brown. Remove from pans and serve immediately. 15 medium-sized muffins. (Use left-over juice in beverage or dessert.)

Cook covered until nearly done in boiling water to cover: 6 medium-sized sweet potatoes Peel and cut them into ½-inch slices. Cook covered until nearly done in a very little boiling water: 1½ to 2 cups thinly sliced apples If the apples are not tart, sprinkle them with: Lemon juice Preheat oven to 350° Grease a baking dish and place in it alternate layers of apples and sweet potatoes. Sprinkle the layers with: ½ cup or more brown sugar A dash cinnamon or grated lemon rind (2 tablespoons seedless raisins) (2 tablespoons chopped pecans) Dot with: ¼ cup butter Pour over the top: ½ cup of the apple water or water Bake about 30 minutes. Or you may omit the sugar and substitute for the apples: 1/2 cup puréed, sweetened apricots, 127, Sauce Cockaigne, 770, or crushed pineapple

From 1943, The Modern Family Cookbook by Meta Givens LEMON CRACKER PUDDING 1 cup evaporated milk 1 cup water ⅔ cup coarse cracker crumbs ¾ cup sugar ½ teaspoon salt ½ teaspoon grated lemon rind 2 tablespoons melted butter 2 eggs, separated ¼ cup sugar 1 tablespoon lemon juice 2 tablespoons lemon juice Add milk to water and scald. Combine cracker crumbs, ¾ cup sugar, salt, 2 tablespoons lemon juice and the rind, and add slowly to scalded milk and water, stirring constantly. Stir in melted butter and beaten egg yolks. Pour into greased baking dish and bake in a moderately slow oven (325° F.) for 45 minutes. Remove from oven; cover with meringue made by beating whites of eggs until stiff, gradually adding ¼ cup sugar and 1 tablespoon lemon juice. Bake in a moderate oven (350° F.) until meringue is brown (12 to 15 minutes). 5 Servings

From 1950, The Betty Crocker Picture Cook Book. SPECIAL BAKED BEANS Mrs. Nels I. Matson of Seattle, Washington, wrote, "This was given my husband by a man very fond of real baked beans. He carried the recipe in his pocket and offered it to all lovers of baked beans." Soak overnight in cold water ... 2 cups navy beans In morning, drain. Save the bean liquor. Put through medium knife of food grinder... ½ Ib. salt pork (scalded, rind removed) 6 sprigs parsley 1 large onion 1 clove garlic 1 green pepper 2 sweet red peppers Mix above ingredients through beans with... 2 tbsp. maple syrup 6 tbsp. catsup Cover with fresh water. Simmer 2 hr. Put into 2-qt. bean pot. . . add just enough bean liquid to cover beans. Cover pot. Bake. Uncover last half of baking. Serve hot . . . with hot Brown Bread. TEMPERATURE: 300° (slow oven). TIME: Bake covered 2½ hr., remove cover and bake 1½ hr. longer. AMOUNT: 6 servings.

For another oat cake, see Guy Fawkes Day Cake, Preheat oven to 350°. > Have all ingredients about 70° Combine and let stand at least 20 minutes: 1 cup rolled oats 1½ cups boiling water Cream together: ½ cup butter 1 cup sugar 1 cup packed brown sugar Add, mixing thoroughly: 2 eggs 1 teaspoon vanilla and the oat mixture. Sift together: 1½ cups all-purpose flour 1 teaspoon baking soda ½ teaspoon salt 1 teaspoon cinnamon ½ teaspoon nutmeg Stir flour mixture into the egg mixture. Beat about 2 minutes, then turn into a greased cake pan and bake 30 minutes or until done. To ice the warm cake, make up a double portion of: Broiled Icing and put under the broiler until light brown

From 1943, The Modern Family Cookbook by Meta Givens PORK SHOULDER STEAK WITH SPANISH RICE 1½ Ibs. pork shoulder steak ½ cup chopped onion ½ cup chopped green pepper ½ cup chopped celery 1 No. 2 tin tomatoes 2 teaspoons salt ⅛ teaspoon black pepper 1 teaspoon paprika 2 teaspoons sugar 1 cup uncooked rice 1 cup water Wipe meat with damp cloth; brown it well in heavy skillet. No additional fat will be needed if meat is well streaked with fat. Add all ingredients except rice, turn heat low, cover and simmer 30 minutes. Then add thoroughly washed rice and simmer 30 to 40 minutes longer, or until rice and meat are perfectly tender. Serve hot. 5 servings.

From 1943, The Modern Family Cookbook by Meta Givens CREAMED EGGS AND ASPARAGUS ON TOAST 3 tablespoons butter or bacon drippings 5 hard-cooked eggs 1 No. 2 tin green asparagus or 1 lb. cooked fresh 3 tablespoons flour 1½ cups milk 5 slices buttered toast 1 teaspoon salt Melt butter, blend in flour and gradually add milk (liquid drained from asparagus may be substituted for part of the milk), stirring constantly until sauce boils and thickens. Add salt, eggs which have been shelled and cut into sixths or sliced, and the drained asparagus. Heat over boiling water before serving on buttered toast. 5 servings.

From 1943, The Modern Family Cookbook by Meta Givens CANDIED SWEET POTATOES 5 medium sweet potatoes or yams 1 cup brown sugar, firmly packed, or granulated sugar ½ cup water ¼ teaspoon salt 2 tablespoons butter Scrub potatoes and peel. Heat the water, sugar, and salt to boiling and put potatoes (left whole or cut in halves) into the hot syrup, turning to coat all over. Cover tightly, reduce heat, and cook slowly, turning potatoes from time to time, until just tender, or from 1 to 1½ hours. Add butter, turning potatoes to mix well, and continue cooking 5 minutes longer. Serve hot, with the syrup over them. Sweet potatoes may also be lazed by heating peeled potatoes and syrup in a covered pan in a moderate oven (375° F.). Turn occasionally and add butter just before serving. 5 servings. Variation: Cooked sweet potatoes may be brushed with melted butter, sprinkled with sugar, and baked in a moderately hot oven (400° F.), uncovered, until hot through, brown, and sugar-crusted.

CANDIED SWEET POTATOES 2 lbs. sweet potatoes ¼ teaspoon salt ⅓ cup butter ½ cup light corn syrup Wash and peel potatoes; cut crosswise in ½-inch slices. Put potato slices into melted butter in a skillet, cover, and cook over low heat for about 10 minutes, turning after about 5 minutes of cooking. When slices have browned delicately, add salt and pour corn syrup over them. Continue cooking slowly for 5 to 10 minutes longer, until potatoes are tender and almost transparent in appearance. Serve hot, with a light sprinkling of nutmeg if desired. 5 servings.

From 1943, The Modern Family Cookbook by Meta Givens CHEESE BISCUITS 1½ cups all-purpose flour 3 teaspoons tartrate or calcium-phosphate baking powder, or 2¼ teaspoons S.A.S. phosphate baking powder ½ teaspoon salt• ¼ cup shortening ½ cup milk ¼ cup grated sharp cheese blended with 2 tablespoons butter Sift flour, measure, and resift twice with baking powder and salt. Cut in the shortening with pastry blender or 2 knives, until particles are size of navy beans. Add milk all at once and stir quickly until dough stiffens. Turn out on floured board and knead for about 20 seconds. Roll out ¼ inch thick and cut in 1½-inch rounds. Spread ⅔ of cheese mixture between pairs of biscuits, sandwich-fashion, and the rest on top, and transfer to a baking sheet. Bake in a hot oven (450° F.) for 12 minutes, or until biscuits are golden brown. Serve piping hot. If preferred, the cheese mixture may be cut into the sifted dry ingredients and distributed through the dough in mixing. 15 to 18 biscuits.

From 1943, The Modern Family Cookbook by Meta Givens STEWED RHUBARB 2 lbs. rhubarb 2 tablespoons water 1 cup sugar Cut off leaves of rhubarb and scrub stalks thoroughly. Do not peel unless the skin seems particularly tough, as the skin gives stewed rhubarb its attractive color. Cut stalks in 1-inch pieces, add the sugar and water. Cover kettle and cook slowly until the rhubarb is tender. Chill and serve plain or with cream. 5 or 6 servings. Variation: A combination of half rhubarb and half strawberries stewed together is delicious.

From 1943, The Modern Family Cookbook by Meta Givens BEEF POT ROAST 4 lbs. beef chuck, round or Pepper, if desired rump 3 tablespoons shortening 3 teaspoons salt ½ cup hot water Wipe meat with damp cloth. Rub with salt, and sprinkle with pepper if desired. Heat fat to sizzling in a heavy skillet or Dutch oven; put in the meat and brown on all sides. Add water, cover tightly, and simmer until meat is perfectly tender, about 1½ to 2 hours. Add more water if needed to keep from going dry. If preferred, the meat, after browning and adding water, may be cooked in a slow oven (300° F.). Serve the liquid remaining in the pan as a gravy, thickening if desired with a little four mixed to a smooth paste with cold water. 8 to 10 servings.

Put in a mixing bowl 1 cup lukewarm water 1 package yeast Let stand 5 minutes. Stir. Add 1 teaspoon sugar 1 teaspoon salt 1 tablespoon shortening Beat well. Add 1½ cups all-purpose flour or bread flour Beat until smooth. Add About 1½ cups flour using enough to make the dough just barely firm enough to handle. Knead until smooth. Divide in thirds. Knead each piece into a ball. Flatten, then pull and stretch gently to fit 9-inch layer cake tins, lightly greased. Press up around the edges to make a slight rim. Let rise 15 minutes. Brush lightly with Olive oil Sprinkle with Parmesan cheese, grated Cover with Fresh tomatoes or drained canned tomatoes 1½ cups all-purpose flour or bread Slivers of mozzarella or other Italian cheese Chopped anchovies or meat Sprinkling of orégano or basil Bake 25 minutes at 425°. Add 3 peppercorns 1 whole clove Bit of bay leaf 1 teaspoon salt 1 tablespoon vinegar 1 quart water Bring to the boiling point. Simmer 15 minutes. Court Bouillon with Wine. Omit the vinegar and add 2 cups dry red or white wine.
