Seconding the David Lodge recommendation. I'm also a big fan of Said, Orientalism and Culture and Imperialism especially. For genre-specific stuff, John Reider's Colonialism and the Emergence of Science Fiction was formative for me.

I like David Lodge's the Art of Fiction because it's basically a (very brief, very normie-friendly) version of this.
