Cool. Well, I just grew up in acadiana and ate gumbo. alot. Anyway, again perfectly valid! Theres tons of ways to make it, the key really comes back to the roux, everything else is just a different mix/kind of Gumbo.

Outside of that the chicken is just a rotisserie chicken, or if you cant get it a portion of chicken thighs in a pressure cooker with any premix cajun seasoning (tony’s is likely most accessible)

Y’all could totally make one, I just posted a recipe. Give it a shot! Cajun Ninja on Youtube probably has a video guide, ignore terminology like andouille any smoked sausage will work. Also trinity is just equal parts bellpepper, white onion and celery(which tbh you can ignore).

I was just talking to my wife about this, someone could totally make a living offering a summer camp at one location that just lasted the entire summer, light and fun activities for the kids and socializing less focus on school etc right to give them a break.

These ended up being probably the best grilled chicken I’ve ever made. Gas grill = oven true but also getting grilling zones figured out.. Also costco chicken thighs range so much in size, gotta strategically place them.

Its genuinely mind boggling how gatekept the sausage is in peoples heads. I’ve found any flavorful smoked sausage is perfectly fine if not better than andouille.

One key takeaway is if you are using a pan that poorly distributes heat, you will need to stir and scrape the bottom to prevent burning. Lots of folks with big ole pots made of thin material, you will burn the bottom. Dutch ovens work great, thin metal not so much.

There are other ways to thicken not limited to gelatin, such as corn starch, and more roux (basically increase the quantity of initial roux).
