Appointment can be self hosted, we already have orgs doing that now. The source code is here: github.com/thunderbird/...

We have some beta testers using it now, but will get it out to the world very soon.

All of what you call out are not the tech itself (LLMs), but what data the models are trained on and what their energy sources are.
