It's kind of like how an air fryer provides convenience even though it does the same thing an oven does. Being able to make tortillas while I taco meat, beans, and rice simmer on the stove or flip dosas at the counter while curry, dal, and rice does its thing is so nice.

From dosas to fresh tortillas (or warming up cold ones from the fridge), to grilled cheese and quesadillas, pancakes, homemade english muffins--basically anything that needs a hot, flat surface.

Obviously, it makes great crepes. I've recently become a sourdough person, and my kids have been enjoying a lot of sourdough discard pancakes and waffles. Sourdough crepes are so easy and so good. But it does SO much more.

My husband gave me an electric crepe maker for Hanukkah, and I must admit that at first, I was dubious. I usually avoid single use tools, and don't exactly have tons of extra storage for an appliance the size of a large Roomba. But to my surprise, it turned out to be the kitchen tool I was missing.

Hear me out: make Marcella Hazan's iconic tomato sauce w/ onion and butter, but instead of discarding the onion, puree the sauce & onion in the blender (or use an immersion blender in the pot). Maybe not traditional, but it's the most velvety, delicious thing you've ever poured over spaghetti.
