Today I made and froze 72 mini vegan ‘sausage’ rolls for my Christmas Eve buffet. Half are vegan Glamorgans and half are Chestnut and Mushroom. I’m now VERY excited! #veganchristmas

I forgot to say you only need to open freeze them for an hour, then pop them in their bags. The freezer is SO useful for minimising food waste (and saving money) I couldn’t be without one!

Blanched in boiling water for 3 minutes. Open frozen laid out on a tray, then transferred to bags and frozen 🥰

Tonight’s offerings are a mushroom and kale lasagna, roast potato chips, frozen French beans (harvested in September). I’m still cooking for more people than live here!
