Adobe Scan will work, but you'll be stuck trying to hold your phone steady for a long time if you have many documents. If you have a printer/scanner anything else is better. Also be warned: PDFs aren't always scannable unless they're image files. You may need something like OCRmyPDF to convert.

This is my field! Assuming your docs are Engrish you might start with Google Drive.
If you had money, ABBYY would be the choice. I also suspect you also want a GUI rather than command line. My home uses VietOCR and if forced to used Windows then gImageReader.

As a photographer I strive always to work on "sequencing" and series of photographs. Consequently I have lots of projects.

This one is from a series called "Tasseomancy," which is as you'd expect a series of tea and tea-related things. But obviously it's not "about" tea.
