Frieren (season one, pre fallout with Crunchyroll) was amazing at cutting through young viewers' "but I haven't caught up!" impulses. The whole premise is based on joining mid-adventure.
I got into Robotech, DBZ, and Ranma at random starting points and did fine. Not that a clear-cut Volume/Episode 1 isn't convenient, but jumping into a story river where it meets you can be a rewarding experience.

A very nice write up of a very nice series—perfectly nails the series appeal and the mention of liminal spaces (of both this series and budding romance as itself a liminal space) was really insightful.
More anime fans should check out the DVD section of their local library. You'd be surprised some of the cool stuff you can find there that is out-of-print and not streaming on any platform. For example, my library has all of Baccano (one of my all-time favorites).
