Also, not related to watches, but I restore vintage audio gear for a living and a lot of times we will "gut" the old original components such as capacitors and put new ones (new tech is smaller so they fit) in the old shell thus maintaining the look of the old with the benifits of new.

They usually call that a "sympathetic restoration" you have sympathy and respect the history of the watch when possible but also can put in new parts. My 57 AirKing has the original (weathered) dial and hands but a new upgraded crystal and gaskets. Best of both worlds IMO
