Both. I got rid of 'em. Cast iron for frying/saute, ceramic for boiling/steaming. It just takes practice. But then, I like to cook.

My elementary did not have a school library (1960s), but every class had a bookcase full of books (doubtless supplied by the teacher) we could "check out" in addition to the curricula. There was kind of a competition amongst us.
