I made a paste with them, rosemary & garlic, olive oil, lemon zest and juice and then rubbed it on to the leg which I had made a few cuts on. Slow cooked on a bed of onions for one hour, added a glass of wine and cooked for another 4. I would add a bit of salt next time too.
