You know what grinds my gears? People who let their dog off leash and then act surprised when their dog misbehaves. As if there was *no possible way* to anticipate this turn of events. Are these people complete morons? Do they think I am? The situation we’re now in is not the dog‘s fault.

Right but if I open a Lambrusco, I know I am opening a fizzy wine. I can make that decision for myself. In this case I am opening a still wine and instead getting a fizzy one (albeit slightly).

My Sicilian grandmother also used it, but she also put in little meatballs. Hard to know if it was brought from Italy or added in the US though.

Anyway it seems likely to me that there is some tradition in southern Italy using ricotta that is disconnected from the northern tradition of béchamel.

Long conversation about when / where / why ricotta was added to lasagne. Trying to figure out if it is an American addition or a southern Italian one, or perhaps both. Ultimately it is hard to know for sure.
