The "Gilroy has to fight to get 2 out of 5 seasons made" thing is fan myth that ignores limitations that existed beyond just Disney. Stellan Skaarsgard was a firm out after 2 seasons - Gilroy made the choice to do 2 seasons with him rather than 5 with alternates

The other thing is the transition from Mel and Sue to Noel and his various partners- Mel and Sue were an existing team who would assist the contestants, cheerlead and caretake. Noel and his partners are clearly looking for the contestants to help them make tv material which is not the same thinkg

The challenges have been built to create drama more often (you need to cook something incredibly complicated in 90 minutes without instructions, leading to half the contestants producing mush that is undercooked or inedible and Paul Hollywood being a douche about it
