That's before you get into how so many of these games also have upgrade resources that you invest in your weapons, which further incentivizes you to pick one and stick with it.

Learning a new weapon while also fighting a new boss that's the hardest boss so far (because they always are) just seems like a dumb thing to do. I kinda feel like the difficulty of these games is inherently anti-experimentation.

For me, the idea of experimenting with weapons in anything pushing the envelope on souls-like-ish difficulty is insane because I depend so much on the muscle memory of already knowing how my weapon works.
