From 1943, The Modern Family Cookbook by Meta Givens CHEESE BISCUITS 1½ cups all-purpose flour 3 teaspoons tartrate or calcium-phosphate baking powder, or 2¼ teaspoons S.A.S. phosphate baking powder ½ teaspoon salt• ¼ cup shortening ½ cup milk ¼ cup grated sharp cheese blended with 2 tablespoons butter Sift flour, measure, and resift twice with baking powder and salt. Cut in the shortening with pastry blender or 2 knives, until particles are size of navy beans. Add milk all at once and stir quickly until dough stiffens. Turn out on floured board and knead for about 20 seconds. Roll out ¼ inch thick and cut in 1½-inch rounds. Spread ⅔ of cheese mixture between pairs of biscuits, sandwich-fashion, and the rest on top, and transfer to a baking sheet. Bake in a hot oven (450° F.) for 12 minutes, or until biscuits are golden brown. Serve piping hot. If preferred, the cheese mixture may be cut into the sifted dry ingredients and distributed through the dough in mixing. 15 to 18 biscuits.
