The farmer's market had berry baskets full of garlic, so yesterday I confited most of it and then froze it. (Didn't want to worry about getting it hot enough to kill any botulinum; the freezer is a good alternative.) I'm looking forward to smelling absolutely delicious for the next few weeks.
