And what options are there when this happens? Litigations? That sounds downright impossible, not to mention exhausting beyond reason. I just hope you can get a second opinion from someone who will actually listen to you.

With traditional art, absolutely not! Pigments and paint ingredients can be somewhat toxic. It's better to avoid food and drinks on the workstation, and to wash hands carefully after a painting session.
I wish I could say this isn't painfully ordinary, but from my experience, they will use ANY excuse to blame it on mental health, whether it is legitimate or not.
I am very sorry this is happening to you too.

A grey-skinned half-drow with tawny brown hair is wearing an ostentatious costume unfolding into butterfly wings attached to the arms. A feathered half-mask sits on his face. He wears the ruffles oddly well. You can't even tell how self-conscious he is. The man spent that entire evening wishing he could hide behind an article of furniture.
I don't think I've shared this before? This was a painterly digital sketch for a costume worn by my D&D character during a masquerade ball back in 2023, inspired by an archduke butterfly.
This grey man isn't comfortable in fancy situations, which was very fun to play. :')

He was mortified the entire masquerade and wanted to crawl into a hole π (they had a really bad dramatic poet standing on a stage, it was tragic)

I cannot stand the feel of textured watercolour paper on my hands. It is akin to sandpaper.
I have the delicate skin of a newborn. π₯²
I believe handmade watercolours often use other preservatives! A. Gallo uses rosemary oil, for example. You can get their paints on Jackson's Art Supplies. It could be worth contacting the brand and seeing if that's the only preservative in there? They might be safe to use!
