ESPN’s broadcast is for sports fans who watch basketball.

It’s my day off and I already ran four miles round trip to fix my car. So I needed something filling.
Let’s take spam, something I haven’t had since I was a kid, and spruce it up with rice, eggs, green onions, and sriracha mayo.

A much better picture of the sauce
First time making carbonara, I had to use pancetta instead of guanciale and regular Romano (I just call it Ray Romano cheese) instead of pecorino.
I’m really happy with how the sauce turned out, but I may have had a bit too much fat in the pan.
