Agreed! After grilling them, my favorite way to cook them is in a cacciatore. I use this recipe, using thighs instead of drums. Finishing it off in the oven with the thighs skin-side up really crisps them up nicely.

Looks great! I almost always have thighs in the freezer. They're absolutely clutch when you're stumped for what to make for dinner, but still want dinner to be awesome.
