This is a hill I am ready to die on. Lafayette boudin recipes are mealy, mushy, overly liver-y and gross. The only good Boudin in Lafayette uses recipes from the Cajun Prairie, Scott, or Saint Landry Parish.

It’s a little heavy on the black pepper, but still better than anything that’s ever come out of Lafayette
