outcome (yay!) aside, this is the kind of data visualization i love. clearly shows the populations voting, not the land area.

these were formed the night before and allowed to ferment overnight in the fridge, but you can also just use the ridiculous oven to proof->steam->bake as one program, if you want plain bagels. they don't get the nice blistering on the crust, though, because there's no fermentation.
our ridiculous miele steam combi oven. 😁 all bagels hit with 100C steam for 1 minute simultaneously (plus the time to get the oven up to temp, so about 3 minutes total).
