What the actual fuck….
Once the wings are cooked, season lightly and return to the air fryer/oven at 220°C for 6 minutes until very crisp.
Toss in half the sauce, cook for another 5 minutes, then finish with the remaining sauce.
Serve topped with spring onions and some thinly sliced red chilli.
For the sauce, melt the butter. Add garlic and ginger and cook gently for 2–3 minutes.
Add chilli and cook for another couple of minutes.
Stir in the lemon and lime zest and juice, honey and fish sauce. Simmer for 5 minutes.
Cut the wings into sections and discard the tips. Pat dry well.
Toss with baking powder and the potato starch or cornflour.
Cook in an air fryer at 180°C for 25 minutes (turn halfway), or bake in the oven at the same temperature.

1kg chicken wings
2 tsp baking powder
2 tsp potato starch or cornflour
Salt & pepper
30g butter
1 lemon
1 lime
3 cloves garlic
1 tbsp grated ginger
1 red chilli
3 tbsp runny honey
1 tsp fish sauce
2 spring onions, chopped
